4 boneless, skinless chicken breasts

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp onion powder

1 tsp dried Italian herbs (oregano, basil, thyme mix)

Salt and pepper to taste

1 cup spinach, chopped (optional)

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Cream Cheese Mixture: In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, grated Parmesan cheese, minced garlic, onion powder, dried Italian herbs, salt, and pepper. Mix until well combined and creamy. If you're adding spinach, fold it in now.

      Season the Chicken: Pat the chicken breasts dry with a paper towel. Season both sides generously with salt and pepper.

        Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 3-4 minutes on each side until golden brown (they don’t need to be fully cooked through as they will finish in the oven).

          Add the Cream Cheese Mixture: Transfer the seared chicken breasts to a baking dish. Spoon the cream cheese mixture evenly over the top of each chicken breast, covering them well.

            Bake the Chicken: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 75°C) and the cream cheese is bubbly and slightly golden.

              Garnish and Serve: Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
