2 tbsp buttermilk

2 tsp vanilla extract

2 tbsp red food coloring

1 cup cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract (for filling)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cocoa powder, and salt. Set aside.

      Make Cookie Dough: In a large bowl, using an electric mixer, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes. Add in the egg, buttermilk, vanilla extract, and red food coloring. Mix until fully combined.

        Combine Mixtures: Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms. Be careful not to overmix.

          Prepare Cream Cheese Filling: In a medium bowl, beat the cream cheese, powdered sugar, and 1 tsp vanilla extract until smooth and creamy.

            Form Cookies: Scoop out about 1 tablespoon of cookie dough and flatten it in your palm. Place about 1 teaspoon of the cream cheese filling in the center, then fold the dough over the filling to seal it. Roll into a ball and place it on the prepared baking sheet. Repeat with the remaining dough and filling.
