4 medium zucchini, spiralized into zoodles

1 tablespoon olive oil

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup spinach leaves (fresh or frozen)

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for a kick)

Fresh basil leaves for garnish (optional)

Prepare the Zoodles: Start by spiralizing the zucchinis into zoodles using a spiralizer or a vegetable peeler. Set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn it.

      Create the Alfredo Sauce: Reduce the heat to low and stir in the heavy cream. Let it warm up for about 2 minutes. Gradually add the grated Parmesan cheese, stirring constantly until the cheese melts and the sauce becomes creamy.

        Add Spinach and Seasonings: Once the sauce is smooth, stir in the spinach leaves, Italian seasoning, salt, pepper, and red pepper flakes (if using). Allow the spinach to wilt, which will take about 1-2 minutes.

          Combine Zoodles: Gently fold the zoodles into the skillet, ensuring they are coated in the creamy sauce. Cook for an additional 3-4 minutes until the zoodles are just tender, stirring occasionally. Be cautious not to overcook, as they can become mushy.
