Creamy Bacon Spinach Alfredo Skillet

8 oz fettuccine pasta

6 strips of bacon, chopped

3 cups fresh spinach, washed and roughly chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp red pepper flakes (optional, for heat)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by cooking the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water (about 1/4 cup).

    In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate, leaving the bacon grease in the skillet.

      Add olive oil to the skillet with the remaining bacon grease. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Carefully add the chopped spinach to the skillet, stirring until wilted—about 2 minutes.

          Pour in the heavy cream, stirring to combine with the garlic and spinach. Bring the mixture to a gentle simmer.

            Once simmering, stir in the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Keep stirring until the cheese has melted and the sauce is creamy and well combined.

              Add the cooked fettuccine to the skillet, tossing to coat the pasta in the creamy sauce. If the sauce is too thick, gradually add the reserved pasta water until you reach the desired consistency.

                Fold in the crispy bacon and allow the mixture to heat through for another minute.

                  Taste and adjust seasonings if necessary. Once it’s all set, remove from heat, garnish with fresh parsley, and serve immediately.
