1 cup wild rice, rinsed and drained

4 cups vegetable broth

1 onion, diced

2 cloves garlic, minced

3 cups fresh broccoli florets

2 medium carrots, diced

2 celery stalks, diced

1 cup heavy cream or coconut milk for a dairy-free option

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Wild Rice: In a large pot, add the rinsed wild rice and pour in the vegetable broth. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 45 minutes or until the rice is tender.
