Creamy Cajun Chicken Pasta

12 oz (340g) fettuccine or linguine pasta

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breasts, sliced into strips

1 tablespoon Cajun seasoning

Salt and pepper, to taste

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth

1 cup (100g) grated Parmesan cheese

2 cups (90g) fresh spinach

2 tablespoons chopped fresh parsley (for garnish)

Optional: Additional Cajun seasoning for serving

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or linguine according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Season the Chicken: In a bowl, combine the sliced chicken breast with Cajun seasoning, salt, and pepper. Toss until evenly coated.

      Sauté the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the diced onion and sauté for about 3 minutes, until it starts to soften. Add the minced garlic and sliced red bell pepper. Cook for an additional 2-3 minutes until the bell pepper is tender.

          Make the Sauce: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream and bring everything to a gentle boil. Reduce the heat to low.

            Add Cheese and Spinach: Gradually stir in the grated Parmesan cheese until melted and well combined. Add in the fresh spinach, allowing it to wilt into the sauce.

              Combine Everything: Return the cooked chicken back to the skillet. Add the drained pasta and toss everything together. If the sauce is too thick, gradually incorporate some reserved pasta water until the desired consistency is reached.

                Final Seasoning: Taste and adjust seasoning with additional salt, pepper, or Cajun seasoning if needed.
