Creamy Cajun Sausage Pasta

12 oz penne pasta

1 lb smoked sausage (such as andouille), sliced into rounds

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 cup heavy cream

1 cup chicken broth

2 teaspoons Cajun seasoning (or to taste)

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

1 cup grated Parmesan cheese

½ cup green onions, sliced (for garnish)

¼ cup fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced sausage and cook until browned (about 5-6 minutes). Remove the sausage and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion, red bell pepper, and green bell pepper. Sauté for about 4-5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Sauce: Pour in the chicken broth and heavy cream. Stir in the Cajun seasoning, salt, and black pepper. Allow the mixture to simmer for about 3-4 minutes, stirring occasionally.

          Combine Everything: Add the cooked sausage back into the skillet along with the drained pasta. Toss everything together to ensure the pasta is well-coated in the creamy sauce. If the sauce seems too thick, add the reserved pasta water, a little at a time, until you reach your desired consistency.

            Finish with Cheese: Gradually stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning as needed.

              Garnish and Serve: Serve the pasta hot, garnished with sliced green onions and freshly chopped parsley.
