Creamy Caprese Pasta Salad

Ingredients
  

8 oz. pasta (fusilli or rotini works best)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, torn

½ cup mayonnaise

¼ cup plain Greek yogurt

2 tbsp olive oil

1 tbsp balsamic vinegar

1 clove garlic, minced

Salt and pepper, to taste

Optional: 1 tsp Italian seasoning or fresh cracked pepper for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a mixing bowl, whisk together the mayonnaise, Greek yogurt, olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper until smooth. If you’re using Italian seasoning, mix it in now.

      Combine the Ingredients: In a large mixing bowl, add the cooked pasta, cherry tomatoes, mozzarella balls, and fresh basil leaves.

        Add the Dressing: Pour the creamy dressing over the pasta mixture. Gently toss everything together until the pasta and vegetables are well coated with the dressing.

          Taste and Adjust: Give the salad a taste and adjust the seasoning with more salt, pepper, or balsamic vinegar if needed.

            Chill the Salad: Cover the bowl and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together. This step is crucial for the best taste!

              Serve: Before serving, give the salad another gentle toss, and if desired, garnish with extra fresh basil or cracked pepper on top.
