Creamy Cauliflower Mac & Cheese

1 medium head of cauliflower, cut into florets

8 oz elbow macaroni (or gluten-free pasta)

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 cup milk (or plant-based milk)

1/2 cup cream cheese, softened

1/2 cup plain Greek yogurt (or sour cream)

3 cloves garlic, minced

1/4 cup grated Parmesan cheese

2 tablespoons unsalted butter

1 teaspoon paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Fresh chopped parsley for garnish (optional)

Instructions
 

Prepare the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 4-5 minutes until tender but still firm. Remove with a slotted spoon and set aside. Reserve the boiling water for the pasta.

    Cook the Pasta: In the same pot, add the elbow macaroni to the reserved boiling water and cook according to package directions until al dente. Drain the pasta and set aside.

      Make the Sauce: In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Reduce heat to low and stir in the milk, cream cheese, and Greek yogurt until smooth.

        Add the Cheese: Gradually add in the cheddar and mozzarella cheese, stirring until melted and creamy. Mix in the salt, black pepper, paprika, garlic powder, and onion powder. If the sauce is too thick, you can add a splash more of milk to reach your desired consistency.

          Blend the Cauliflower: In a blender, add the cooked cauliflower florets along with a scoop of the cheese sauce (about 1 cup). Blend until smooth and creamy. Return this mixture back to the saucepan with the remaining cheese sauce and stir to combine well.

            Combine Pasta and Sauce: Add the drained pasta to the creamy cauliflower sauce, stirring gently until all the pasta is coated evenly. If the mixture seems dry, you can add a bit more milk to loosen it up.

              Bake (Optional): Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish, top with grated Parmesan cheese, and bake for 15-20 minutes until bubbly and golden on top.

                Serve: Garnish with fresh chopped parsley, if desired. Serve hot and enjoy your creamy cauliflower mac & cheese!
