Creamy Chicken and Rice Bake

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup long-grain white rice, rinsed

2 cups low-sodium chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese (plus extra for topping)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the chicken pieces. Season with salt, pepper, thyme, and paprika. Cook for about 5-7 minutes, or until the chicken is slightly browned and cooked through. Remove from skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Combine Rice and Liquids: In a large mixing bowl, combine the rinsed rice, chicken broth, heavy cream, and sautéed onions & garlic. Stir in the frozen mixed vegetables and season with additional salt and pepper if desired.

          Mix Chicken: Add the cooked chicken pieces to the rice mixture, gently folding to combine all ingredients evenly.

            Transfer to Baking Dish: Pour the entire mixture into a greased 9x13 inch (23x33 cm) baking dish, spreading it out evenly. Sprinkle the top with shredded cheddar cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and allow the dish to sit for 5 minutes. Garnish with freshly chopped parsley before serving.
