8 oz (225g) fettuccine or pasta of choice

2 ripe avocados, pitted and peeled

1 cup cooked chicken breast, shredded or diced

2 cloves garlic, minced

1/2 cup fresh basil leaves, packed

1/2 cup grated Parmesan cheese (plus extra for serving)

1/4 cup olive oil

Juice of 1 lemon

Salt and pepper to taste

Red pepper flakes (optional, for heat)

Fresh cherry tomatoes, halved (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water before draining.
