Creamy Chicken Taco Casserole

2 cups cooked chicken, shredded (about 2-3 chicken breasts)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies, undrained

1 package (1 oz) taco seasoning mix

1 cup sour cream

1 cup cream cheese, softened

1 cup shredded cheddar cheese (plus additional for topping)

1 cup tortilla chips, crushed (plus more for serving)

½ cup onion, finely chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Chicken Mixture: In a large skillet over medium heat, add the olive oil. Sauté the onions and bell peppers until they are soft, about 5 minutes. Add the minced garlic and cook for another minute.

      Combine Ingredients: In a large mixing bowl, combine the cooked chicken, black beans, corn, diced tomatoes (with their juices), taco seasoning, sour cream, cream cheese, and crushed tortilla chips. Stir until all the ingredients are well combined.

        Layer the Casserole: Grease a 9x13 inch baking dish. Spread half of the chicken mixture into the bottom of the dish. Top with 1 cup of shredded cheddar cheese. Add the remaining chicken mixture on top and finish with an extra cup of shredded cheddar cheese.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

            Garnish and Serve: Once baked, remove the casserole from the oven and let it cool slightly. Garnish with fresh cilantro and sliced jalapeños if desired. Serve with more crushed tortilla chips on the side.
