1 cup green or brown lentils, rinsed and drained

1 can (13.5 oz) coconut milk

4 cups vegetable broth (low-sodium)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric

1/2 teaspoon smoked paprika

1 teaspoon fresh ginger, grated

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

Juice of 1 lime

Fresh cilantro or parsley, chopped (for garnish)

Instructions
 

Prepare the Base: In the crockpot, add the rinsed lentils, diced onion, minced garlic, diced carrots, diced celery, and diced red bell pepper.

    Add Aromatics and Liquids: Sprinkle the ground cumin, coriander, turmeric, smoked paprika, ginger, salt, and black pepper over the vegetable mixture. Pour in the vegetable broth and the can of coconut milk, stirring gently to combine all the ingredients.

      Cook the Soup: Cover the crockpot with its lid and cook on low for 6-8 hours, or on high for 3-4 hours, until the lentils are tender and the vegetables are soft.

        Blend for Creaminess: Once cooked, if you prefer a smoother texture, use an immersion blender to blend the soup until it reaches your desired creaminess. Alternatively, you can blend a portion of the soup in a regular blender and return it to the crockpot for a thicker consistency.

          Finish the Flavor: Stir in the lime juice just before serving. Taste and adjust seasoning if necessary.
