4 medium-sized potatoes, peeled and diced

1 cup frozen or fresh corn kernels

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free version)

2 tablespoons olive oil or unsalted butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley for garnish

Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Cook Potatoes: Add the diced potatoes to the pot. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and cook until the potatoes are tender, about 15-20 minutes.

      Add Corn and Seasonings: Stir in the corn, dried thyme, smoked paprika, salt, and pepper. Simmer for another 5 minutes, allowing the flavors to meld.

        Creamy Finish: Remove the pot from heat. Using an immersion blender, blend the chowder until smooth, leaving some chunks of potatoes for texture (alternatively, you can transfer half of the chowder to a blender, puree it, and return to the pot). Stir in the heavy cream or coconut milk.

          Final Adjustments: Heat the chowder over low heat, adjusting seasoning with more salt and pepper if necessary.
