4 cups fresh corn kernels (about 6-8 ears of corn)

1 medium onion, diced

2 medium potatoes, peeled and diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

4 cups vegetable or chicken broth

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh chives or parsley for garnish

Prep the Corn: If using fresh corn, carefully slice the kernels off the cobs and set aside. You can also freeze fresh corn beforehand for convenience.

    Sauté the Base: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onions and bell pepper, and sauté for about 5 minutes until softened. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Incorporate the Potatoes: Add the diced potatoes to the pot and stir well to combine. Follow with the corn kernels, salt, pepper, smoked paprika, and dried thyme. Mix everything together for a minute or two.

        Add the Broth: Pour in the vegetable or chicken broth, bringing the mixture to a boil. Reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.

          Blend it Up (Optional): For a creamier texture, you can use an immersion blender to puree some of the chowder—just be careful not to over-blend. If you prefer a chunkier chowder, skip this step.

            Stir in the Cream: Once the potatoes are tender and the flavors have melded, reduce the heat to low and stir in the heavy cream. Allow it to heat through for about 5 minutes without boiling.

              Taste and Adjust: Check for seasoning and add more salt, pepper, or spices as needed.
