Creamy Cucumber & Dill Salad

2 large cucumbers, preferably English or seedless

1 cup Greek yogurt (plain, full-fat or low-fat)

2 tablespoons fresh dill, finely chopped (plus extra for garnish)

1 tablespoon fresh lemon juice (about half a lemon)

1 teaspoon garlic powder (or 1 clove garlic, minced)

1 teaspoon apple cider vinegar

½ teaspoon salt (more to taste)

¼ teaspoon freshly ground black pepper

½ teaspoon sugar or honey (optional, to taste)

¼ red onion, thinly sliced (optional)

Cherry tomatoes for garnish (optional)

Instructions
 

Prepare the Cucumbers: Wash the cucumbers and slice them thinly. If using regular cucumbers, you might want to peel them to avoid bitterness. Place the sliced cucumbers in a colander, sprinkle with a bit of salt, and let them sit for about 15 minutes to draw out excess water.

    Make the Dressing: In a medium mixing bowl, combine the Greek yogurt, chopped dill, lemon juice, garlic powder, apple cider vinegar, salt, black pepper, and sugar or honey (if using). Whisk until smooth and creamy. Taste and adjust seasoning if necessary.

      Combine: After the cucumbers have released some water, pat them dry with a paper towel. Add the cucumbers to the bowl with the dressing. If you’re using red onion, add it now as well.

        Toss Well: Gently toss the cucumbers in the dressing until they are evenly coated. Be careful not to crush the cucumbers; you want them to stay crisp.

          Chill: Transfer the salad into a serving bowl and cover with plastic wrap. Refrigerate for at least 30 minutes to allow the flavors to meld.

            Serve: Before serving, give the salad a gentle stir. Garnish with additional chopped dill and cherry tomatoes for a pop of color and freshness.
