Ingredients

1 cup Greek yogurt (full-fat or low-fat)

1 medium cucumber, grated and excess water squeezed out

2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice (freshly squeezed)

1 garlic clove, minced

1 tablespoon olive oil

Salt and black pepper to taste

Optional: a pinch of red pepper flakes for a little heat

Instructions

Prepare the Cucumber: Start by grating the cucumber. Place it in a clean kitchen towel or cheesecloth and squeeze out as much water as possible. This step is crucial to keep the dip creamy instead of watery.

Mix the Base: In a medium-sized mixing bowl, add the Greek yogurt as the base for your dip.

Combine Flavors: To the yogurt, add the grated cucumber, fresh dill, lemon juice, minced garlic, and olive oil. Mix everything together gently until well combined.

Season: Taste the mixture and season with salt and black pepper according to your preference. If you want a hint of spice, sprinkle in some red pepper flakes at this point.

Chill: Cover the bowl tightly with plastic wrap or a lid and let the dip chill in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully.

Serve: Once chilled, give the dip a quick stir and transfer it to a serving bowl. Garnish with a sprig of fresh dill or a few cucumber slices for presentation.

Enjoy: Serve alongside pita chips, fresh vegetables, or as a topping for grilled meats.
