Ingredients

8 oz (approximately 2 cups) pasta (shells or rotini work great)

1 cup dill pickles, finely chopped (plus extra for garnish)

1/2 cup red onion, finely diced

1 cup cherry tomatoes, halved

1 cup cooked and crumbled bacon (optional for extra flavor)

1 cup mayonnaise

1/2 cup sour cream

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

Prepare the Dressing: In a large mixing bowl, combine the mayonnaise, sour cream, chopped dill, Dijon mustard, apple cider vinegar, salt, and pepper. Whisk together until smooth and well combined.

Combine the Ingredients: Once the pasta has cooled, add it to the mixing bowl with the dressing. Stir in the chopped dill pickles, red onion, cherry tomatoes, and crumbled bacon (if using). Mix until all ingredients are evenly coated with the creamy dressing.

Chill the Salad: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld together. This chilling step is key for a deliciously tangy and creamy taste.

Serve: Before serving, give the pasta salad a good stir. Taste and adjust seasoning with more salt and pepper if desired. Garnish with additional chopped dill pickles and fresh dill if preferred. Serve chilled and enjoy!
