Creamy Garlic Mushroom Pasta

8 ounces fettuccine (or pasta of choice)

2 tablespoons olive oil

1 tablespoon unsalted butter

4 cloves garlic, minced

16 ounces mushrooms (cremini or button), sliced

1 cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper (adjust to taste)

¼ teaspoon red pepper flakes (optional)

1 tablespoon fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional, for brightness)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of the pasta cooking water, then drain the pasta and set aside.

    Sauté the Garlic and Mushrooms: In a large skillet over medium heat, add the olive oil and butter. Once the butter is melted, add the minced garlic and sauté for about 1 minute, until fragrant.

      Add the Mushrooms: Increase the heat to medium-high and add the sliced mushrooms to the skillet. Cook for about 6-8 minutes, stirring occasionally, until the mushrooms are browned and tender.

        Create the Cream Sauce: Lower the heat to medium and pour in the heavy cream, stirring to combine. Let it simmer for 2-3 minutes until it thickens slightly.

          Add Cheese and Season: Mix in the grated Parmesan cheese, and season with salt, pepper, and red pepper flakes (if using). Stir until the cheese is melted and the sauce is creamy.

            Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing to coat the noodles in the sauce. If the sauce is too thick, gradually add some of the reserved pasta water until the desired creaminess is achieved.

              Garnish and Serve: Remove from heat, and if desired, stir in lemon zest for added brightness. Garnish with chopped parsley before serving.
