Ingredients

1 cup orzo pasta

2 tablespoons olive oil

3-4 cloves garlic, minced

1 cup vegetable or chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/2 cup frozen peas

1/4 cup fresh parsley, chopped (for garnish)

Instructions

Cook the Orzo: In a large pot, bring water to a boil. Add a pinch of salt and orzo. Cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.

Sauté Garlic: In the same pot, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.

Add Broth and Cream: Pour in the vegetable or chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.

Incorporate Cheese: Gradually add the freshly grated Parmesan cheese to the pot, stirring continuously until the cheese has melted and the sauce is creamy and smooth.

Season: Season the sauce with salt, black pepper, and red pepper flakes (if desired). Stir well to ensure all the flavors meld together.

Combine Orzo and Peas: Add the cooked orzo and frozen peas to the creamy sauce. Toss everything together until the orzo is coated with the sauce and the peas are heated through, about 2-3 minutes.

Serve: Remove from heat and garnish with chopped parsley before serving.
