4 medium zucchinis, spiralized into zoodles

1 cup heavy cream

1 cup freshly grated Parmesan cheese

4 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional)

1 tablespoon chopped fresh parsley, for garnish

1 teaspoon lemon juice (optional, for brightness)

Prepare the Zoodles: Begin by spiralizing the zucchinis using a spiralizer. If you don’t have one, you can use a vegetable peeler to create thin strips (fettuccine-style).

    Cook the Zoodles: In a large skillet over medium heat, add the olive oil. Once the oil is hot, add the zoodles and season with a pinch of salt and pepper. Sauté for 2-3 minutes until just tender (but still al dente). Remove the zoodles from the skillet and set aside.

      Make the Creamy Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant (do not let it burn). Lower the heat and pour in the heavy cream, stirring continuously.

        Add Parmesan: Gradually add the grated Parmesan cheese to the cream, stirring until well combined. Allow the sauce to simmer for 2-3 minutes until it thickens slightly. If using, stir in the red pepper flakes for a touch of heat.
