To achieve the perfect shrimp for your Creamy Garlic Shrimp Fettuccine, mastering the sautéing technique is essential. Start by patting the shrimp dry with a paper towel. This step is crucial because moisture can prevent the shrimp from searing properly, leading to a less flavorful result. Season the shrimp generously with salt and pepper to enhance their natural taste.

Ingredients

8 ounces fettuccine pasta

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon red pepper flakes (optional)

1 teaspoon lemon zest

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Fettuccine: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

Sauté the Shrimp: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the shrimp. Season with salt and pepper and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Prepare the Garlic Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant (do not let it brown).

Make it Creamy: Pour in the heavy cream, stirring to combine. Bring the mixture to a gentle simmer, then add the Parmesan cheese, lemon zest, and red pepper flakes (if using). Stir until the cheese has melted and the sauce is smooth. If the sauce is too thick, add some reserved pasta water to reach the desired consistency.

Combine: Add the cooked fettuccine and sautéed shrimp back into the skillet with the creamy sauce. Toss everything together to coat the pasta evenly in the sauce. Cook for another 1-2 minutes until heated through.

Serve: Plate your delicious creamy garlic shrimp fettuccine and garnish with freshly chopped parsley. Enjoy your meal!
