12 oz fettuccine or spaghetti

1 can (14 oz) artichoke hearts, drained and quartered

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 teaspoon lemon zest

1/4 cup fresh lemon juice

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional, for a hint of spice)

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.

      Add Artichokes: Gently add the quartered artichoke hearts to the skillet. Cook for 3-4 minutes, stirring occasionally, until they are heated through and slightly golden.

        Make the Creamy Sauce: Lower the heat and pour in the heavy cream. Stir in the lemon zest, lemon juice, and grated Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy.

          Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing it in the creamy sauce until well coated. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

            Season: Season with salt, pepper, and red pepper flakes (if using) to taste.

              Serve: Garnish with fresh basil leaves and additional Parmesan cheese. Serve hot and enjoy!
