Creamy Lemon Chickpea Pasta

8 ounces spaghetti or your favorite pasta

1 cup canned chickpeas, drained and rinsed

1 tablespoon olive oil

3 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream or coconut cream

Zest and juice of 1 large lemon

1 teaspoon thyme (fresh or dried)

½ teaspoon red pepper flakes (optional)

Salt and black pepper to taste

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 cups fresh spinach, chopped

Lemon wedges and fresh parsley for garnish

Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Cook the spaghetti according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain the pasta and set aside.

    Sauté Aromatics: In a large pan over medium heat, drizzle the olive oil. Add minced garlic and sauté for about 1 minute, until fragrant, being careful not to burn it.

      Add Chickpeas and Broth: Stir in the chickpeas and vegetable broth. Let it simmer for about 5 minutes to combine the flavors.

        Create the Creamy Sauce: Lower the heat and add the heavy cream (or coconut cream), lemon zest, lemon juice, thyme, red pepper flakes, salt, and black pepper. Stir well to combine. Allow the sauce to simmer for another 3-5 minutes, thickening slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the pan, tossing it in the creamy sauce until well coated. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.

            Add Spinach: Gently fold in the chopped spinach until wilted, about 1-2 minutes.
