8 oz (225g) pasta (fettuccine or spaghetti)

2 tablespoons olive oil

3 cloves garlic, minced

5 cups fresh spinach (washed and roughly chopped)

1 cup heavy cream

1 cup grated Parmesan cheese

Zest of 1 lemon

2 tablespoons fresh lemon juice

Salt and black pepper to taste

¼ teaspoon red pepper flakes (optional)

Fresh basil or parsley for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add the Spinach: Gradually add the chopped spinach to the skillet. Stir and cook until the spinach has wilted and reduced in volume, about 2-3 minutes.

        Create the Creamy Sauce: To the skillet with spinach, add the heavy cream, Parmesan cheese, lemon zest, and lemon juice. Stir well to combine, allowing the cheese to melt and the sauce to thicken slightly. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss gently to coat the pasta in the creamy sauce. Season with salt, black pepper, and red pepper flakes if using. Stir thoroughly until everything is well combined and heated through.
