Creamy Mac & Cheese Muffin Cups

1 cup elbow macaroni

1 ½ cups sharp cheddar cheese, shredded

½ cup mozzarella cheese, shredded

4 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk

1 teaspoon Dijon mustard

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

¼ cup breadcrumbs (optional for topping)

Fresh chives or parsley, chopped for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a standard muffin tin with cooking spray or butter.

    Cook Macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Make Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, add the flour and whisk continuously for about 1 minute until it becomes a light golden color.

        Add Milk: Slowly pour in the milk while whisking continuously to avoid lumps. Continue to cook until the mixture thickens, about 5 minutes.

          Season & Cheese It Up: Stir in the Dijon mustard, garlic powder, onion powder, salt, and pepper. Slowly add the cheddar and mozzarella cheese, stirring until fully melted and combined.

            Combine: Add the cooked macaroni to the cheese sauce, stirring until all the pasta is well coated.

              Fill Muffin Tin: Spoon the creamy mac and cheese mixture into the prepared muffin tin, filling each cup almost to the top. If desired, sprinkle breadcrumbs on top for extra crunch.

                Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the tops are golden and slightly crispy.

                  Cool & Serve: Once baked, let the muffin cups cool for about 5 minutes before gently removing them from the tin using a fork or silicone spatula. Garnish with fresh chives or parsley if desired.
