Ingredients

4 ears of fresh corn, husked

1 cup cream cheese, softened

1/2 cup sour cream

1 cup mayonnaise

1 cup cotija cheese, crumbled

1/2 cup fresh cilantro, chopped

1 lime, juiced

2 teaspoons chili powder

1 teaspoon garlic powder

Salt and pepper to taste

Tortilla chips, for serving

Instructions

Grill the Corn: Preheat your grill and place the husked corn on the grates. Grill for about 10-15 minutes, turning occasionally, until the kernels are lightly charred and cooked through. Remove from the grill and let cool slightly. Once cooled, cut the kernels off the cob and set them aside.

Mix the Base: In a large bowl, combine the softened cream cheese, sour cream, and mayonnaise. Beat until the mixture is smooth and creamy.

Add the Flavorings: Stir in the crumbled cotija cheese, chopped cilantro, lime juice, chili powder, garlic powder, salt, and pepper. Mix well to combine all ingredients evenly.

Incorporate the Corn: Fold the grilled corn kernels into the creamy mixture, ensuring each kernel is coated with the dip. Taste and adjust seasoning if necessary.

Chill (Optional): For the best flavor, cover the dip and let it chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully.

Serve and Enjoy: Serve the dip in a bowl, garnished with additional cilantro and a sprinkle of cotija cheese on top. Pair with crispy tortilla chips for dipping.
