1 cup Arborio rice

2 cups chicken broth

1 cup white wine (optional, or extra broth)

1 cup cooked chicken, shredded or diced

1 cup mushrooms (button or cremini), sliced

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

2 tablespoons olive oil

1 tablespoon unsalted butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Broth: In a saucepan, heat the chicken broth over low heat and keep it warm throughout the cooking process.

    Sauté the Aromatics: In a large, heavy-bottomed pot, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for another 1 minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the pot and cook for about 5 minutes until they are browned and their moisture has evaporated.

        Toast the Rice: Stir in the Arborio rice and toast it for 1-2 minutes, allowing it to absorb the flavors. The rice should appear slightly translucent around the edges.

          Deglaze with Wine: If using, pour in the white wine and let it simmer until the liquid is mostly absorbed.

            Add Broth Gradually: Begin adding the warm chicken broth, one ladleful at a time, stirring frequently. Wait until the liquid is almost completely absorbed before adding the next ladle. This process will take about 18-20 minutes.

              Incorporate Chicken and Cream: Once the rice is al dente and creamy, stir in the cooked chicken and heavy cream. Mix well to combine. Season with salt and pepper to taste.

                Finish with Parmesan: Remove the risotto from heat and fold in the grated Parmesan cheese until melted and creamy.

                  Garnish and Serve: Scoop the creamy risotto into bowls and garnish with freshly chopped parsley. Serve immediately for the best texture.
