Creamy Pesto Chicken Tortellini

1 lb (450g) fresh tortellini (cheese or chicken-filled)

2 tbsp olive oil

1 lb (450g) boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup basil pesto (store-bought or homemade)

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 cups fresh spinach

Salt and pepper to taste

Fresh basil leaves for garnish

Lemon wedges for serving (optional)

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the diced chicken, seasoned with salt and pepper. Sauté for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
