12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1 cup fresh spinach, chopped

½ cup corn (frozen or canned)

½ cup red bell pepper, diced

¼ cup red onion, finely chopped

1 cup pesto sauce (store-bought or homemade)

½ cup cream cheese, softened

½ cup Greek yogurt (or sour cream)

2 tbsp olive oil

1 tsp lemon juice

Salt and pepper to taste

Shaved Parmesan cheese for garnish

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Dressing: In a mixing bowl, combine the pesto sauce, softened cream cheese, Greek yogurt, olive oil, lemon juice, and a pinch of salt and pepper. Whisk together until the mixture is smooth and creamy. Adjust seasoning to taste.

      Mix Salad Ingredients: In a large mixing bowl, combine the cooled tortellini, halved cherry tomatoes, diced cucumbers, chopped spinach, corn, red bell pepper, and red onion.

        Dress the Salad: Pour the creamy pesto dressing over the tortellini and vegetable mixture. Gently toss until everything is well coated and evenly distributed.
