1 medium head of cauliflower, cut into florets

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup cream cheese, softened

½ cup sour cream

½ cup grated Parmesan cheese

1 teaspoon lemon juice

½ teaspoon smoked paprika

Fresh chives or parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Roast the Cauliflower: On a baking sheet, toss the cauliflower florets with 2 tablespoons of olive oil, garlic powder, onion powder, salt, and pepper. Spread them out in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, flipping once halfway through.

      Make the Dip Base: Once the cauliflower is cool enough to handle, transfer it to a food processor. Add the softened cream cheese, sour cream, grated Parmesan cheese, lemon juice, smoked paprika, and remaining tablespoon of olive oil.

        Blend Until Smooth: Pulse the mixture until it reaches a creamy consistency. You may need to scrape down the sides a few times to incorporate all ingredients evenly. Taste and adjust seasoning with salt and pepper as needed.
