Creamy Roasted Garlic Orzo

Ingredients
  

1 cup orzo pasta

1 bulb of garlic

2 tablespoons olive oil

3 cups vegetable broth

1 cup heavy cream

½ cup grated Parmesan cheese

1 cup fresh spinach, chopped

1 teaspoon lemon zest

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the bulb of garlic, drizzle with 1 tablespoon of olive oil, and wrap it in foil.

        - Place it in the oven and roast for 30-35 minutes, or until the cloves are soft and golden. Allow to cool slightly before squeezing the garlic out of the skins.

          Cook the Orzo:

            - In a medium saucepan, bring the vegetable broth to a boil and add the orzo.

              - Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

                Prepare the Sauce:

                  - In a large skillet over medium heat, add the remaining tablespoon of olive oil.

                    - Squeeze the roasted garlic cloves into the skillet, mashing them slightly.

                      - Pour in the heavy cream, stirring to combine, and bring to a simmer.

                        Combine Ingredients:

                          - Add the cooked orzo to the creamy garlic sauce, stirring to coat well.

                            - Mix in the grated Parmesan cheese and chopped spinach. Continue to cook for another 2-3 minutes until the spinach is wilted and everything is heated through.

                              - Add the lemon zest, and season with salt and pepper to taste.

                                Serve:

                                  - Transfer the creamy roasted garlic orzo to a serving bowl.

                                    - Garnish with fresh parsley before serving warm.
