Creamy Roasted Garlic Pasta

1 head of garlic

12 oz spaghetti or fettuccine

2 tbsp olive oil

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup vegetable or chicken broth

1 tbsp lemon juice

1 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Take the head of garlic, slice off the top (about 1/4 inch) to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for 30-35 minutes until soft and caramelized. Remove and allow to cool slightly.

    Cook the Pasta: While the garlic is roasting, bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to the package directions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.

      Make the Creamy Sauce: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Squeeze the roasted garlic cloves out of their skins into the skillet. Mash them slightly with a fork.

        Combine Ingredients: Pour in the heavy cream, vegetable or chicken broth, lemon juice, salt, black pepper, and red pepper flakes if using. Stir well to combine and simmer for about 5 minutes, allowing the sauce to thicken slightly.

          Add Cheese and Pasta: Lower the heat and mix in the grated Parmesan cheese until smooth and creamy. If the sauce seems too thick, add a little reserved pasta water to reach your desired consistency. Toss in the cooked pasta, making sure to coat it evenly with the sauce.

            Garnish and Serve: Remove from the heat and garnish with fresh chopped parsley. Serve immediately while warm, with extra Parmesan on the side if desired.
