3 large red bell peppers

1 medium onion, chopped

4 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Fresh basil for garnish (optional)

Roast the Peppers: Preheat your oven to 400°F (200°C). Place the whole red bell peppers on a baking sheet lined with parchment paper. Roast them for about 25-30 minutes, or until the skin is blistered and charred, turning them halfway through for even roasting.

    Sauté the Aromatics: While the peppers are roasting, heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Stir in the minced garlic and cook until fragrant, about 1 minute.

      Prepare the Peppers: Once roasted, remove the peppers from the oven and place them in a bowl; cover with plastic wrap to steam for about 10 minutes. This will help loosen the skins. After steaming, peel the skins off the peppers, then remove the seeds and stems. Chop them roughly.

        Blend the Sauce: In the same saucepan with the sautéed onions and garlic, add the roasted chopped peppers, heavy cream, and balsamic vinegar. Stir to combine. Bring to a gentle simmer, then transfer the mixture to a blender or use an immersion blender to puree until smooth.

          Finish with Cheese: Return the blended sauce to the saucepan over low heat. Stir in the grated Parmesan cheese until melted and incorporated. Season with salt and pepper to taste. Let it simmer for a few minutes to thicken slightly.
