8 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

3 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 tsp Italian seasoning

Salt and pepper to taste

2 tbsp fresh parsley, chopped (for garnish)

Optional: pinch of red pepper flakes for heat

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Shrimp: In a large skillet over medium-high heat, add the olive oil. Once hot, add the shrimp, season with salt, pepper, and Italian seasoning, and sauté until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and stir, cooking for an additional 2-3 minutes until it starts to thicken.

        Add Cheese: Gradually whisk in the grated Parmesan cheese until smooth and creamy. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

          Combine: Add the cooked pasta to the sauce in the skillet. Toss to coat the pasta thoroughly. Then gently fold in the sautéed shrimp, allowing everything to warm together for a minute.
