12 oz penne pasta

1 lb chicken breast, diced

2 tbsp olive oil

1 cup diced bell peppers (red and green)

1 small onion, diced

3 cloves garlic, minced

1 cup corn (frozen or fresh)

1 can (15 oz) black beans, rinsed and drained

1 cup chicken broth

1 cup heavy cream

1 tsp smoked paprika

1 tsp chili powder

1/2 tsp cumin

Salt and pepper to taste

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the diced chicken breast, seasoning with salt and pepper. Sauté for 5-7 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.

      Sauté Veggies: In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic, bell peppers, and corn, and cook for an additional 3-5 minutes until the vegetables are tender.

        Combine Ingredients: Return the cooked chicken to the skillet. Stir in the black beans, chicken broth, heavy cream, smoked paprika, chili powder, and cumin. Bring to a gentle simmer.
