Creamy Spinach Ricotta Pasta Shells

12 large pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

1 cup mozzarella cheese, shredded (plus extra for topping)

1/4 cup grated Parmesan cheese

1 egg

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 jar (24 oz) marinara sauce

Fresh basil for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a mixing bowl, combine the ricotta cheese, chopped spinach, mozzarella cheese, grated Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

      Stuff the Shells: Preheat your oven to 375°F (190°C). Spoon a layer of marinara sauce into the bottom of a baking dish (about 1 cup). Take each pasta shell and generously fill it with the ricotta-spinach mixture. Place the stuffed shells in the baking dish lined with sauce.

        Cover and Bake: Once all the shells are tucked away in the dish, pour the remaining marinara sauce evenly over the top. Sprinkle with additional mozzarella cheese to create a delicious cheesy crust. Cover the dish with aluminum foil.
