Creamy Sun Dried Tomato Chicken Pasta

12 oz penne pasta

2 tablespoons olive oil

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

Salt and pepper, to taste

4 cloves garlic, minced

1 cup sun-dried tomatoes, finely chopped (packed in oil)

1 teaspoon dried basil

1 teaspoon dried oregano

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh spinach

Fresh basil leaves, for garnish

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, lower the heat to medium and add minced garlic. Sauté for about 1 minute until fragrant. Stir in the sun-dried tomatoes, dried basil, and oregano, cooking for another minute.
