Creamy Thai Coconut Chickpeas

1 can (15 oz) chickpeas, rinsed and drained

1 tablespoon coconut oil

1 onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, diced

1 carrot, sliced

1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

2 tablespoons soy sauce (or tamari for gluten-free)

2 teaspoons brown sugar

1 tablespoon lime juice

Salt and pepper, to taste

Fresh cilantro, for garnish

Cooked jasmine rice or quinoa, for serving

Lime wedges, for serving

Instructions
 

Sauté the Aromatics: In a large skillet, heat the coconut oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Add the Vegetables: Add the diced red bell pepper and sliced carrot to the skillet. Cook for about 5-7 minutes, or until the vegetables are tender, stirring occasionally.

      Create the Sauce: Stir in the coconut milk, red curry paste, soy sauce, and brown sugar. Mix well to combine all of the ingredients. Bring this mixture to a gentle simmer.
