Creamy Tomato Basil Pasta with Tofu

Ingredients
  

12 oz (340g) pasta of your choice (fettuccine or penne work well)

1 block (14 oz) firm tofu, drained and pressed

2 tbsp olive oil

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1/2 cup coconut milk (full fat for extra creaminess)

1/4 cup nutritional yeast

1 tbsp balsamic vinegar

1 tsp dried oregano

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated parmesan cheese (or vegan alternative), for serving (optional)

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the rest. Set aside.

      Prepare the Tofu:

        - While the pasta cooks, cut the pressed tofu into bite-sized cubes. In a large skillet, add olive oil over medium heat. Once hot, add the tofu cubes and sauté for about 7-10 minutes, turning occasionally until golden brown and slightly crispy. Remove and set aside.

          Create the Sauce:

            - In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant. Then, add the crushed tomatoes, coconut milk, nutritional yeast, balsamic vinegar, oregano, red pepper flakes, salt, and pepper. Stir well to combine and let it simmer for about 5-7 minutes.

              Combine Pasta and Tofu:

                - Once the sauce has thickened a bit, add the cooked pasta and crispy tofu to the skillet. Toss to combine, adding reserved pasta water a little at a time until the sauce reaches your desired creaminess.

                  Finishing Touches:

                    - Taste and adjust seasoning as needed. Remove from heat, and let it cool slightly. Serve with fresh basil leaves and a sprinkle of grated parmesan cheese, if desired.
