1 cup Arborio rice

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (14.5 oz) crushed tomatoes

4 cups vegetable broth (low sodium)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh basil leaves, chopped (reserve some for garnish)

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until they are soft and fragrant.

    Stir in the Arborio rice to toast it lightly, about 2 minutes. This step helps to release the starch and gives a creamier texture.

      Transfer the rice mixture to the Crockpot. Add in the crushed tomatoes, vegetable broth, dried oregano, salt, and pepper. Stir until well combined.
