2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 (14-ounce) cans diced tomatoes (preferably fire-roasted)

2 cups vegetable or chicken broth

1 cup heavy cream (you can use coconut cream for a dairy-free version)

1 teaspoon sugar

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried oregano

1 cup fresh basil leaves, roughly chopped

Optional: 1 tablespoon balsamic vinegar for added depth

For the Grilled Cheese:

4 slices sourdough or whole-grain bread

4 slices sharp cheddar cheese (or cheese of your choice)

2 tablespoons unsalted butter

Instructions
 

Prepare the Soup:

    - In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 5-7 minutes).

      - Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        - Add the canned diced tomatoes (with juices) to the pot. Pour in the vegetable or chicken broth, then bring the mixture to a gentle boil.

          - Once boiling, reduce the heat and let it simmer for about 15 minutes, stirring occasionally.

            - Stir in the heavy cream, sugar, salt, pepper, dried oregano, and chopped basil. Let the soup simmer for another 5 minutes to allow flavors to meld.

                Make the Grilled Cheese:
