1 lb fresh or shelf-stable gnocchi

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 cup heavy cream

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

1 cup fresh spinach

½ cup grated Parmesan cheese (plus more for garnishing)

Fresh basil leaves, for garnish

Instructions
 

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface (usually around 2-3 minutes for fresh gnocchi or 4-6 minutes for shelf-stable). Drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 3-4 minutes, until softened. Stir in the minced garlic and cook for another minute until fragrant.

      Create the Sauce: Add the can of diced tomatoes (with juices) to the skillet, followed by the heavy cream, dried basil, oregano, and red pepper flakes, if using. Stir well to combine and let the sauce simmer for about 5 minutes, until slightly thickened.

        Combine: Add the cooked gnocchi to the skillet, tossing to coat them in the creamy tomato sauce. Season with salt and pepper to taste.
