Creamy Tomato Spinach Skillet Pasta

8 oz (225 g) penne pasta

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup vegetable broth

1 cup heavy cream or coconut milk for a dairy-free option

4 cups fresh spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until it becomes translucent, about 4-5 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

      Add Tomatoes & Broth: Pour in the diced tomatoes (with juices) and vegetable broth. Stir to combine and bring to a gentle simmer.

        Incorporate Cream: Reduce the heat to low, and slowly stir in the heavy cream (or coconut milk). Mix well until fully incorporated and creamy. Allow it to simmer for about 3-4 minutes to thicken slightly.

          Season the Sauce: Stir in the dried basil, oregano, salt, and pepper to taste. Adjust the seasoning based on preference.

            Add Spinach & Pasta: Add the chopped spinach to the skillet and stir until wilted, about 2-3 minutes. Then, add the drained pasta to the skillet and toss everything together until the pasta is well coated with the creamy sauce.

              Finish with Cheese: Stir in the grated Parmesan cheese (or nutritional yeast) until melted and evenly distributed throughout the pasta.
