1 package (9 oz) fresh cheese tortellini

2 cups fresh spinach, roughly chopped

1 cup cremini mushrooms, sliced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside, reserving about 1/4 cup of the pasta water.
