Ingredients
  

2 cups elbow macaroni (gluten-free if desired)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

For the Creamy Dressing:

1 cup raw cashews (soaked in water for at least 2 hours)

1/4 cup nutritional yeast

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1-2 tablespoons maple syrup (to taste)

1/4 teaspoon garlic powder

Salt and black pepper, to taste

Water (as needed for thinning)

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: While the pasta cools, drain and rinse the soaked cashews. In a high-speed blender or food processor, combine the cashews, nutritional yeast, lemon juice, Dijon mustard, maple syrup, garlic powder, salt, and pepper. Blend until smooth and creamy, adding water gradually until you achieve your desired consistency.

      Combine the Salad: In a large mixing bowl, combine the cooled macaroni, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley. Pour the creamy dressing over the salad and gently mix until everything is well-coated.

        Chill and Serve: For best flavor, cover the salad and let it chill in the refrigerator for at least 30 minutes before serving. Taste and adjust seasoning, adding more salt, pepper, or lemon juice if necessary.
