1 large onion, diced

3 cloves garlic, minced

2 medium potatoes, peeled and diced

4 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon thyme (dried or fresh)

1 tablespoon lemon juice

Fresh basil or parsley for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute, making sure it doesn't burn.

    Cook the Vegetables: Add the chopped zucchinis and diced potatoes to the pot. Stir well to combine, then sprinkle with salt, pepper, and thyme. Cook for about 5–7 minutes, stirring occasionally.

      Add Broth: Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 20 minutes, or until the zucchinis and potatoes are tender.

        Blend the Soup: Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a countertop blender, blending until smooth.

          Make it Creamy: Once blended, return the soup to the pot (if you used a countertop blender) and stir in the heavy cream or coconut cream. Allow the soup to heat through over low heat for about 5 minutes. Adjust seasoning with additional salt, pepper, and lemon juice to taste.
