Crispy Baked Feta Pasta Rolls

Ingredients
  

8 oz. rigatoni pasta (or your choice of tubular pasta)

1 block (about 8 oz.) feta cheese

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnishing (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with olive oil.

    Cook Pasta: In a large pot of salted boiling water, cook the rigatoni pasta according to package instructions until al dente. Drain and set aside.

      Prepare Feta Filling: In a medium bowl, combine the feta cheese, cherry tomatoes, minced garlic, dried basil, dried oregano, olive oil, red pepper flakes, salt, and pepper. Mash together lightly with a fork until creamy but still chunky.

        Assemble Rolls: Take a piece of rigatoni pasta and fill it with a generous spoonful of the feta mixture. Repeat with the remaining pasta and filling until all are filled. Place the filled pasta rolls seam-side down in the prepared baking dish.
