2 medium zucchini

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Cooking spray or olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray or drizzle with a little olive oil.

    Prepare the Zucchini: Wash and dry the zucchini. Cut off the ends and slice them into wedges or sticks, about 1/4 inch thick. Ensure the pieces are uniform for even cooking.

      Set Up the Breading Station: In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well until all ingredients are evenly distributed.

        Egg Wash: In a separate bowl, beat the two eggs together until well combined.

          Bread the Zucchini: Dip each zucchini stick first into the egg wash, allowing the excess to drip off, then coat it in the breadcrumb mixture, pressing down slightly to adhere. Place the coated zucchini sticks on the prepared baking sheet in a single layer.
