1 lb fresh salmon fillet, skin removed

1/2 cup panko breadcrumbs

1/4 cup all-purpose flour

1 large egg, beaten

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Oil, for frying

For Bang Bang Sauce:

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (or to taste)

1 teaspoon lime juice

1 teaspoon honey

Prepare the Salmon: Cut the salmon fillet into bite-sized pieces (about 1 inch). Pat them dry with a kitchen towel to ensure they fry up crispy.

    Set Up Breading Station: In one bowl, place the flour mixed with salt, garlic powder, paprika, and black pepper. In a second bowl, beat the egg. In the third bowl, add the panko breadcrumbs.

      Bread the Salmon: Dip each salmon piece into the flour, shaking off excess. Then, dip into the beaten egg, and finally coat thoroughly in the panko breadcrumbs, pressing gently to adhere.

        Heat Oil: In a large skillet, heat about 1/4 inch of oil over medium-high heat. To test if the oil is ready, drop a small piece of breading into the oil; if it sizzles, it’s ready.
